Vegan Rubicon Bakers Review
Here is what I think of some of the vegan cake and cupcake options from Rubicon Bakers.
Introduction
On my way to the Des Moines International Airport, I stopped by Gateway Market and came across Rubicon Bakers. They sell regular and vegan cakes and cupcakes. I tried one of their vegan cake flavors and two vegan cupcake options. Here is what I think of them.
- Vegan Chocolate Blackout Layer Cake
- Vegan Neapolitan Cupcakes
- Vegan Vanilla Cupcakes
Vegan Chocolate Blackout Layer Cake (6/10)
The vegan chocolate blackout layer cake wasn’t half bad. It was a little dry and tasted like it had a peanut butter flavor when it didn’t contain peanut butter. I wished it was moister and creamer.
They also sell vegan vanilla layer cake and red velvet layer cake.
Vegan Neapolitan Cupcakes (7/10)
The vegan Neapolitan cupcake tasted good, but the frosting and the filling in the middle were rather stiff. It had a decent chocolate flavor but lacked enough vanilla and strawberry.
Vegan Vanilla Cupcakes (5/10)
The vegan vanilla cupcake was undercooked and too doughy. That is fine when you have chocolate chip cookies, but not when you make cupcakes. The frosting and inside filling were also stiff like the Neapolitan cupcakes’.
Additionally, Rubicon Bakers makes vegan lemon raspberry and chocolate blackout cupcakes.
Overall (6/10)
The presentation of the desserts was good, but the baking needed some work. I wished there was a way to have them in the bakery instead of the refrigerated section to make their frosting taste better. Also, the vegan packaging versus the regular desserts’ should be more distinct (i.e., different packaging colors or labels).
