What I Eat in a Day: Vegan Easter
Here is what I made for a vegan Easter meal.
Asparagus Soup
I tried this asparagus soup from Clean & Delicious, which was not for me. I prefer more hearty and chunky soup. This soup made me feel like I was eating baby food, but it would be great for those who prefer puree soups.
Berry Salad
I experimented with making a berry salad by me. It was initially good with the combo of berries and greens. The problem I run into is it ferments very quickly. I have to figure out a way to make it without that happening.
Mushroom Stroganoff
Last but not least, I tried making mushroom stroganoff by From My Bowl. I did not realize that this was a recipe that required some practice and technique. The first time making this was smushy and unflavorful. I'll have to create this recipe some more before it is good enough to serve at family gatherings.
